A Chef's Easter: Cooking for the People I Love (My Personal Holiday Menu)


We understand that for many of you, the holidays can feel like a bit of a marathon. Whether you are hosting a dozen relatives or just trying to get a nice meal on the table for your immediate family, the pressure to make everything "perfect" is real. We’ve been there, and we truly empathize with the planning stress that comes with a Southern Easter dinner.

This year, things are looking a little different for me. While the team at Anita & Joe’s is usually busy prepping for our wonderful clients, I’m actually heading out of town to spend Easter with my own family. It’s a rare treat to step out of the professional kitchen and into the heart of my home, but the "chef" part of my brain never quite turns off!

We love to share our passion for food, so I thought I’d take you behind the scenes of what I’m planning to cook for the people I love most. This isn't just about recipes; it’s about the joy of gathering and the collaboration that happens when we break bread together.

For my family Easter, I wanted a menu that felt sophisticated but wasn't so demanding that I’d spend the whole day stuck at the stove. We want to be present for the egg hunts and the conversations, too! Here is the lineup I’ve settled on:

  • The Vibrant Side: Roasted Carrots with Harissa Yogurt and Pistachios

  • The Fresh Side: Grilled Asparagus with Meyer Lemon Infused Olive Oil and Sea Salt

  • The Grand Finale: Chocolate Pot de Creme

The Heart of the Meal: Braised Lamb

When we think of a Southern Easter dinner, ham often takes the spotlight. But in my family, we love to shake things up a bit. We decided on a braised lamb for the centerpiece this year.

Braising is one of our favorite techniques because it’s incredibly forgiving and, honestly, it’s a bit of a "set it and forget it" miracle. We understand that you don't want to be hovering over a roasting pan checking temperatures every five minutes. By braising the lamb in a rich liquid: think red wine, beef stock, garlic, and plenty of fresh rosemary: the meat becomes buttery and tender.

The best part? You can do most of the work hours before your guests arrive. We love to see the look on people’s faces when the meat just falls off the bone. It feels luxurious, but it’s actually one of the most low-stress ways to cook for a crowd. Bringing the Color: Roasted Carrots and Harissa Yogurt

We’re huge fans of "sweet meets heat." For the vegetable side, I’m doing roasted carrots, but we’re giving them a modern twist.

Spring carrots are naturally sweet, and when you roast them, that sugar caramelizes and gets even better. But to keep the dish from being one-note, we’re serving them over a bed of cool, creamy yogurt swirled with harissa. Harissa is a North African chili paste that adds a smoky, spicy depth.

We love to top this dish with toasted pistachios for a necessary crunch. It’s a beautiful, colorful plate that usually ends up being the "sleeper hit" of the meal. It proves that Southern catering doesn't always have to be heavy; it can be vibrant and exciting!

Simple Elegance: Grilled Asparagus

Nothing says spring like asparagus. We want to keep this side dish as simple as possible to let the fresh produce shine.

We’ll be tossing these spears on the grill just long enough to get some beautiful char marks. The secret ingredient here is Meyer lemon infused olive oil. Meyer lemons are a bit sweeter and more floral than your standard grocery store lemon, and they pair perfectly with the earthiness of the asparagus.

A Sweet, Smooth Finish: Chocolate Pot de Creme

We don't think an Easter dinner is complete without something chocolate. While I love a good cake, I wanted something that felt a bit more intimate and decadent.

Chocolate Pot de Creme is essentially a very fancy, very dense French custard. It’s rich, velvety, and: here is the pro tip: it has to be made a day in advance. We love anything that can be pulled straight from the fridge when it’s time for dessert. It removes that final "dessert rush" stress.

We serve ours with a tiny dollop of unsweetened whipped cream and maybe a few fresh raspberries. It’s the perfect end to a meal that’s all about indulgence and family.
