You might be surprised to learn that the "Southern" identity of fried green tomatoes is actually a bit of a modern twist! While we’ve claimed them as our own for decades, food historians actually trace their early roots back to the North and Midwest, often appearing in Jewish cookbooks in the late 19th century.

It wasn't until the beloved book and film Fried Green Tomatoes at the Whistle Stop Café came out in the late 20th century that the dish became globally synonymous with the deep South. We think that’s a beautiful thing, it shows how food can travel, evolve, and eventually find a home where it’s most loved. Today, we’re proud to carry on that tradition, bringing those heritage flavors right here to the PNW.

We start with the firmest green tomatoes we can find, usually sourced from our favorite local spots like the Tacoma Proctor Market. If there’s even a hint of red or a touch of softness, they won't make the cut for frying.

  • The Cast Iron Connection: There’s no substitute for a heavy cast iron skillet. It holds the heat perfectly, ensuring the tomato cooks through while the crust turns that beautiful, shatteringly crisp golden brown.
