We love to experiment in the kitchen, taking the techniques passed down through our family and applying them to the treasures we find at our local markets. Whether it’s foraged mushrooms from the Cascades or fresh-caught salmon from the Sound, we’ve found that Southern soul and PNW spirit are actually a match made in heaven.

We’re often asked why we don’t just stick to the traditional recipes exactly as Anita and Joseph Malone made them. While those classic flavors are the heartbeat of our business, we’re also passionate about honoring the place where we live. Our chef, Billy, has over 15 years of culinary experience, and he’s learned that the "why" behind Southern cooking is just as important as the "what." By using PNW ingredients, we are actually following the truest Southern tradition: cooking with the land around us.

Dungeness Crab Gumbo with Wild Mushrooms

Gumbo is the ultimate Southern comfort food, and it’s a dish we take very seriously. But when we swap out standard shrimp for succulent PNW Dungeness crab and add foraged chanterelle mushrooms to our dark, rich roux, it becomes something entirely new. The earthy mushrooms complement the sweetness of the crab in a way that feels like a cozy forest hike and a trip to the bayou all in one bowl.
