We understand that when you think of BBQ, your mind probably goes straight to that classic, tangy tomato base or maybe a spicy mustard sauce. We love those traditions too! But we also know that sometimes, you’re looking for something that feels a little more special: something that honors our Southern roots while celebrating the incredible bounty we have right here in the Pacific Northwest.
At Anita & Joe's, we’re always looking for ways to bring a touch of the "Deep South" to our neighbors in Washington and Oregon. One of our favorite ways to do that is by taking a local star: the PNW blueberry: and letting it shine in a savory, smoky setting. We’re happy to show you how these little berries can totally transform your next backyard gathering or catered event!
Why Blueberries and BBQ are a Match Made in Heaven
You might be used to seeing blueberries in muffins or a classic Southern cobbler, but we love to use them in savory dishes because they have a secret talent. They have a natural acidity and a deep, complex sweetness that pairs perfectly with smoke and spice.
We’ve found that when we simmer these berries down, they create a rich, jammy texture that clings to meat beautifully. It’s not just about adding sugar; it’s about adding depth. Our Signature Blueberry Bourbon BBQ Glaze
We’re so excited to talk about our glaze! It’s one of those things we’ve tinkered with for years until we got it just right. We start with fresh (or frozen, depending on the season) blueberries and slowly simmer them with a splash of bourbon, some apple cider vinegar, and a hint of smoked paprika.
We don't want you to worry about it being too sweet. We make sure to balance that berry flavor with savory onions, garlic, and just enough spice to give it a little kick. We love to brush this glaze onto ribs or chicken during the last few minutes of cooking. It creates this gorgeous, dark purple lacquer that looks as good as it tastes!
If you’re worried about the alcohol, don't be! We cook the bourbon down until most of the alcohol is gone, leaving behind those warm, oaky notes that play so well with wood smoke. Whether we’re preparing a family meal or catering a large wedding, this sauce is always a conversation starter.
Bringing the "Blue" to Your Sides

Blueberry & Cabbage Slaw
We understand that a good BBQ needs a crunch. Our Blueberry & Cabbage Slaw is one of our favorite creations. We toss shredded purple and green cabbage with a creamy buttermilk dressing: just like our grandmothers used to make: and then we fold in fresh blueberries.

The berries add these little pops of tartness that cut right through the richness of pulled pork or brisket. It’s colorful, it’s fresh, and it’s a great way to add some local PNW flair to a traditional Southern menu.
Savory Blueberry Cornbread
We also love to whip up batches of our savory cornbread. Now, this isn't your typical "cake-like" cornbread. We keep it more on the savory side with plenty of butter and maybe even a little cheddar cheese. Adding blueberries to the batter creates these beautiful pockets of flavor that aren't overly sweet. It’s the perfect companion for soaking up that extra blueberry BBQ sauce on your plate!
