We're often asked what makes a perfect tomato sandwich. In our opinion, it’s all about the Beefsteak. These are those massive, meaty tomatoes that can sometimes weigh over a pound! They have a classic, balanced flavor that isn't too sweet or too acidic.

We love to use Beefsteaks because they hold their shape when you slice them thick. When we're preparing a family lunch, we're happy to layer these on toasted white bread with a little bit of high-quality mayo and a pinch of salt. That’s it: simplicity at its finest! Because they have a high water content, they stay juicy and refreshing even on the hottest July afternoons.

Heirloom Varieties: The Soul of the South

When we talk about "heirlooms," we're talking about seeds that have been passed down through generations. These tomatoes aren't always pretty: they can be lumpy, bumpy, and come in colors like purple, green, or even striped. But what they lack in uniform looks, they more than make up for in soul.

  • Cherokee Purple: We’re obsessed with this one. It has a deep, smoky, and sweet flavor that is unlike any other tomato. It’s perfect for a sophisticated salad or just eating with a fork and some balsamic.

  • Brandywine: This is a Southern staple. It has a high sugar content and a very rich flavor. We love to use Brandywines when we want a tomato that really stands out in a dish.

  • Arkansas Traveler: These are specifically bred to handle the heat, which makes them incredibly resilient. They have a mild, creamy texture that we find works beautifully in cooked preparations as well as fresh ones.

If we're making a slow-cooked sauce or a hearty Southern stew, we're almost certainly reaching for San Marzano tomatoes. These are a type of plum tomato, but they’re a bit longer and thinner than your average Roma.

We love these because they have fewer seeds and a lower water content, which means they break down into a thick, velvety sauce much faster. They have a deep red color and a naturally sweet, low-acid profile. When we provide our personal chef service, we often use these for our signature marinades and gravies to give them that authentic "simmered all day" taste.

Cherry and Grape Tomatoes: Little Bursts of Joy
