Foraging for Flavor: How We Turn Wild Clover into Artisan Jelly

But here at Anita & Joe's, we love to take a moment to slow down and notice the little things: like the tiny white and red blossoms that suddenly carpet our Pacific Northwest fields every spring.

We are happy to share that one of our favorite ways to celebrate the change in weather is by looking back at our Southern roots. In the Deep South, foraging isn't just a trendy hobby; it’s a way of life that has been passed down through generations. We love to bring that same spirit of preservation and passion to our personal chef services and event catering here in the PNW. Today, we’re taking you behind the scenes to show you how we turn a common "weed" into our signature artisan clover flower jelly.

A Tradition Rooted in the South

We often talk about Anita and Joseph Malone, the inspirations behind everything we do. They taught us that food is more than just fuel; it’s a way to bring joy and build community. We remember stories of "making do" with what the land provided. In the South, nothing went to waste. If the fields were full of clover, you didn’t just mow it: you harvested it.

We’ve found that many of our customers in the Pacific Northwest crave that same sense of connection to the land. Whether you’re looking for event catering or a special intimate dinner, we strive to bring that authentic, hand-crafted feel to every dish. Clover jelly is a perfect example of this. It’s often called "poor man's honey" because of its sweet, delicate flavor, but to us, it’s a luxury of the earth that we are so excited to share with you.

The Foraging Journey: Red vs. White Clover

We don't just pick any clover we see! We are very careful about where we forage to ensure everything we serve is clean and safe. We stay away from busy roads and treated lawns because we want the purest flavor possible.

Did you know that different clovers offer completely different flavor profiles? We love to use a mix of both white and red clover to create a complex, layered jelly.

  • White Clover (Trifolium repens): These are the little white blossoms you see in almost every lawn. They have a light, sweet, and delicate flavor that many people describe as being similar to honey or even a hint of pineapple.

  • Red Clover (Trifolium pratense): These blossoms are larger and lean more toward a deep pink or purple. We love red clover because it brings a fruitier, richer note to the jelly, reminiscent of plums or mild berries.

By blending the two, we create a jelly that is bright, floral, and perfectly balanced. We understand that planning a menu can be stressful, so we take the guesswork out of it by finding these unique, seasonal ingredients that your guests will be talking about for weeks!

How We Craft the Jelly

We believe in being transparent about our process because we want you to feel like a partner in our culinary journey. We don't use artificial flavors or "mystery" ingredients. It’s just blossoms, water, lemon, sugar, and a bit of pectin.

Step 1: The Infusion

First, we take those beautiful, cleaned blossoms and steep them in boiling water to create a "clover tea." We don't rush this part! We often let the tea steep for several hours or even overnight to draw out every bit of that floral essence.

Step 2: The Brightening

Once the tea is strained, we add a splash of fresh lemon juice. This is a crucial step! Not only does it help the jelly set, but it also brightens the flavor, much like putting a squeeze of lemon in a tall glass of Southern sweet tea. We love how the acidity cuts through the sweetness and brings out the hidden fruit notes of the clover.

Step 3: The Boil

We bring the infusion to a rolling boil and add our sugar and pectin. Chef Billy uses his 15+ years of culinary experience to monitor the temperature and consistency. We’re looking for that perfect "sheet" off the spoon: not too runny, not too firm. It’s a labor of love, and we are happy to do it because we know the difference shows in the final taste.

  • The Classic Biscuit: A warm, flaky buttermilk biscuit (our specialty!) with a thick layer of jelly.

  • Glazed Poultry: We sometimes use the jelly as a base for a glaze on roasted chicken or Cornish hens. The floral sweetness caramelizes beautifully in the oven.

  • Yogurt and Granola: For our personal chef clients who need a bright start to their morning, a swirl of clover jelly in Greek yogurt is a game-changer.

  • Cheese Pairings: It pairs exceptionally well with a sharp white cheddar or a creamy goat cheese.
