But at Anita & Joe's, we believe that a Southern meal shouldn't just be a one-hit wonder. In fact, some of our favorite flavors actually get better after they’ve had a chance to sit and mingle in the fridge overnight.
We love to call this "Second-Day Magic." It’s the art of taking what’s already in your fridge and reimagining it into something fresh, exciting, and just as soul-warming as the original meal. Billy always says that a good chef doesn't just see a container of cold grits; they see the potential for a crispy, golden appetizer. Before we get to the fun part of cooking, we need to talk about the "why" behind food safety. We want to make sure your Second-Day Magic stays delicious and safe for everyone at your table. According to our kitchen standards and general food safety guidelines, you should keep your Southern leftovers within a 3-5 day window in the refrigerator.
We’ve found that one of the biggest mistakes people make is storing everything together in one big bowl. We suggest separating your components! If you have gumbo, store the rice in one container and the stew in another. If you have roasted chicken and veggies, keep them separate. This gives you much more flexibility. You’re not stuck eating the exact same "stew" again; you can use that chicken for a salad and those veggies for a morning frittata.
Turning Grits into Gold: The Crispy Grit Cake
If you’ve ever had our creamy, buttery grits, you know they are the stars of the show. But once they get cold, they turn into a solid block. Don't let that discourage you! We love to turn that "block" into crispy grit cakes.
Here’s how we do it:
Take your chilled grits out of the container.
Slice them into squares or use a biscuit cutter for circles.
Dredge them lightly in a little bit of flour.
Pan-fry them in a skillet with a tiny bit of butter or oil until they are golden brown and crispy on the outside, but still creamy on the inside.
These are incredible served under a piece of blackened fish, topped with a fried egg, or even just eaten with a little bit of hot honey.
