The Southern Secret: It’s All About the Batter
If you grew up in the South, you know that a "cobbler" isn't just a pie with a different name. We often see people get frustrated when their cobbler turns out like a soggy biscuit or a dense cake. We don't want you to worry about that!
The true Southern style: specifically the "self-battering" method: is actually incredibly simple once you know the trick. Instead of rolling out dough or dropping biscuits on top, we use a pourable batter.
The "No-Stir" Magic
We love to use this technique because it creates a unique texture. You melt butter in your pan first, pour the batter over it, and then scatter your berries on top. Do not stir it! As it bakes, the batter rises through the berries, and the edges of the crust "fry" in the butter, creating a crispy, golden-brown rim that is absolutely to die for!
