Chef Billy has been hard at work in the kitchen, experimenting with flavors that bridge the gap between his Southern roots and the vibrant, green landscapes we love so much here in the PNW. A New Southern Classic: Fig Leaf Smoked Quail

We are happy to introduce a dish that is close to our hearts and full of smoky, savory goodness: our Fig Leaf Smoked Quail. If you’ve spent any time in the South, you know that quail is a true delicacy. It’s small, tender, and carries flavor like nothing else. But we wanted to put our own spin on it: something that feels like a crisp spring morning in Washington.

Instead of traditional wood chips, Chef Billy uses dried fig leaves to smoke the quail. This technique infuses the meat with a subtle, earthy sweetness and a hint of coconut-like aroma that you just don't get from standard hickory or applewood. It’s these small, thoughtful details that we love to obsess over because we know they make a big difference in your dining experience.

But a Southern plate isn't complete without gravy, right? We’re serving this smoked beauty with an authentic red eye gravy. If you aren't familiar with it, red eye gravy is a Southern staple traditionally made from the drippings of pan-fried country ham mixed with black coffee. It’s salty, bold, and provides the perfect punch of flavor to balance the delicate smoke of the quail.

To keep things fresh and seasonal, we’ve paired the quail with a bright micro green salad and sautéed spring peas. We love to source our greens locally, often finding inspiration at Seattle’s best farmers markets. The snap of the peas and the peppery bite of the microgreens bring that essential "spring" feel to every forkful. We love to use flowers because they add a whimsical, elegant touch to any table setting. It’s a great way to prepare for the PNW garden party season and get your guests talking!

To go along with the bread, we’re serving a house-made sunflower butter. By using sunflower seeds instead of traditional dairy or nuts, we create a rich, creamy spread that is inclusive for guests with various dietary needs while maintaining a deep, nutty flavor. It’s a small way we practice our low-waste and whole-ingredient philosophy, making sure every part of the plant is celebrated.
