We know that after a long, rainy Pacific Northwest winter, your soul is probably craving a bit of sunshine and a lot of fresh flavor. We’ve been right there with you, staring out the window at the gray skies and dreaming of the first local harvest. At Anita & Joe's, we believe that food is the ultimate way to celebrate the changing of the seasons, and we are so excited to finally pull back the curtain on what we’ve been cooking up for spring.

As the flowers start to bloom across Washington and the days get a little longer, our kitchen is buzzing with new energy. We’ve spent the last few weeks collaborating, tasting, and refining a menu that bridges the gap between our deep Southern roots and the incredible bounty of the Pacific Northwest. We understand that you want food that feels comforting but also light, vibrant, and celebratory of the new life all around us.

The Heart of Our Spring Vision

When people think of Southern food, they often think of heavy, slow-simmered dishes designed to keep you warm in the winter. While we love a good hearty bowl of grits as much as anyone, Southern cuisine is actually deeply rooted in the garden. Historically, Southern cooks were some of the best seasonal eaters around, using whatever was coming out of the dirt at that exact moment.

We are happy to bring that philosophy to our pacific northwest catering services. We love to take those traditional Southern techniques: like pickling, smoking, and slow-roasting: and apply them to the crisp, bright ingredients we find right here in our backyard. This spring, we’re focusing on "The Green and the Sweet." We’re talking about those snap-pea crunches and those first-of-the-season strawberry juices.

Fresh PNW Ingredients with a Southern Soul

We understand that you might be looking for something unique for your next gathering. That’s why we’ve gone all-in on sourcing local. Our spring menu is a love letter to the PNW farmers who provide us with the building blocks for our southern catering magic.

Asparagus Like You’ve Never Had It

In the South, we’re famous for frying things, but we do it with a delicate touch. This season, we’re featuring locally grown PNW asparagus. Instead of just steaming it, we love to lightly tempura-batter these stalks with a cornmeal-dusted twist and serve them with a zesty lemon-remoulade. It’s crunchy, it’s fresh, and it’s the perfect appetizer for a garden party.

Sweet Peas and Minty Succotash

Succotash is a Southern staple, but we’re giving it a spring makeover. We’re moving away from the heavy lima beans and moving toward sweet, local peas and tender broad beans. We toss them with charred corn, fresh mint, and a hint of smoked paprika to give it that "Anita & Joe's" signature warmth. You can find variations of these sides on our catering menu.

The Strawberry Harvest

There is nothing: and we mean nothing: quite like the first strawberries of the season. We’re incorporating these ruby-red gems into everything from our salads to our desserts. We’re especially proud of our Spinach and Strawberry salad, topped with candied pecans and a homemade balsamic-honey vinaigrette. It’s simple, elegant, and tastes like a sunny afternoon.

With Easter Sunday just around the corner on April 5th, we know that many of you are starting to feel that familiar "holiday host" stress. We understand that you want to provide a beautiful, memorable meal for your family, but the thought of spending the whole day in the kitchen: and the subsequent week cleaning up: can feel overwhelming.

We want to help you take that stress off your plate (literally!). Whether you’re looking for full-service southern catering or a more intimate personal chef service, we are here to ensure your Easter is about connection, not chores.

The Centerpiece: Our Signature Smoked Ham

Taking inspiration from classic Southern BBQ traditions, our Easter ham isn't just something we pop in the oven. We take a premium spiral-cut ham and smoke it low and slow over hickory wood. This gives it a deep, complex flavor that you just can't get from a grocery store. We then finish it with a honey brown sugar glaze that creates a beautiful, sticky crust. It’s the kind of centerpiece that gets people talking.

Comforting Spring Sides

No Easter table is complete without the sides. We’re currently perfecting our Baked Sweet Potatoes, loaded with honey butter and a dash of cinnamon, to provide that sweet-and-savory balance that Southern food is famous for. We’t also offering lighter options, like our herb-roasted new potatoes, to keep the meal feeling balanced and fresh.
