At Anita & Joe's, we believe that life is way too short for boring tomatoes. We’re happy to tell you that there is a better way, and it involves embracing what some people might call "ugly." We’re talking about heirloom tomatoes, those lumpy, bumpy, multi-colored wonders that carry the soul of the Deep South right here to the Pacific Northwest.

What Exactly is an Heirloom, Anyway?

We’re often asked what makes a tomato an "heirloom" versus a regular hybrid. It’s a great question! In the simplest terms, an heirloom tomato is a variety that has been passed down through generations of gardeners. They are open-pollinated, which means the seeds are saved from the best fruit year after year, preserving a specific flavor profile and history.

Modern supermarket tomatoes are hybrids. We don’t want to be too hard on them, but they were bred for very specific (and non-delicious) reasons:

  • Durability: They need to survive a 1,000-mile truck ride without bruising.

  • Shelf Life: They need to look "fresh" for weeks on a shelf.

  • Uniformity: They all need to be the same size to fit into those plastic cartons.

Unfortunately, when you breed for shipping and shelf life, you usually lose the flavor. Heirloom tomatoes are the exact opposite. They are delicate, thin-skinned, and sometimes quite strange-looking, but they were bred for one thing and one thing only: taste.

Meet the Heavy Hitters: Cherokee Purple and Brandywine

If you’ve never had a real heirloom tomato, we are so excited for you to try your first bite. We have a few personal favorites that we always look for at the local markets.

The Cherokee Purple

We’re obsessed with the Cherokee Purple. It’s a legendary Southern variety that originated in Tennessee. Legend has it that the seeds were passed down from the Cherokee people over a hundred years ago.

When you see one, you might think it’s bruised. It has a dusky, brownish-purple skin and often has "green shoulders" (the top stays a bit green even when it’s ripe). But when you slice into that brick-red flesh? It’s a game-changer. The flavor is:

  • Rich and Smokey: It has a depth that most tomatoes lack.

  • Sweet and Wine-like: It’s incredibly complex.

  • Intensely Juicy: This is the ultimate "sink tomato": meaning you should probably eat it over the kitchen sink so you don't ruin your shirt!

The Brandywine

The Brandywine is often considered the gold standard of heirloom flavor. It’s been around since at least 1885, and for good reason. These are big, beefy tomatoes that can grow to be quite heavy. They have a classic "old-fashioned" tomato taste that is perfectly balanced between sweet and tangy. We love to use these for large slicing platters because they are just so substantial and satisfying.

You might be wondering why a southern cuisine personal chef is so focused on tomatoes in the PNW. We understand that our climate here is a bit different from the humid summers of Georgia or South Carolina. But we’ve found that when the summer sun finally hits Washington and Oregon, our local farmers produce some of the most incredible heirlooms in the country.

You can’t make a real Southern tomato sandwich with a supermarket hybrid: it just doesn't work! We’re happy to do the legwork of scouting the best farms and markets so that you can enjoy that deep-south taste without the guesswork.

The Art of the Simple Southern Tomato Sandwich

We believe that some of the best culinary experiences are the simplest ones. In the South, the tomato sandwich is practically a holy rite of summer. We love to prepare these for our personal chef clients during the peak of the season.

There are no hidden charges or fancy gadgets needed here: just pure, high-quality ingredients. Here is how we do it:

  1. The Bread: It has to be soft, plain white bread. Nothing fancy!

  2. The Mayo: We have strong opinions on mayo (Duke’s is our go-to), and we spread it thick on both slices.

  3. The Tomato: Thick, heavy slabs of a perfectly ripe Cherokee Purple or Brandywine.

  4. The Seasoning: Just a generous sprinkle of sea salt and freshly cracked black pepper.

That’s it. We don't add lettuce, we don't add bacon (unless it’s a BLT day!), and we certainly don't toast the bread. We want the tomato to be the hero of the story. The juice from the tomato mingles with the mayo to create a "sauce" that is truly the stuff of dreams.
