Or how a delicate, bruise-prone fruit could make its way from a rural Southern farm all the way to a bustling dinner table in New York City in the 1800s? We’re happy to pull back the curtain on this delicious piece of history. It all started with a man named Samuel Rumph and a single, remarkable peach called the Elberta.
The Man and the Most Famous Peach in the World
We’re often inspired by the pioneers of Southern cuisine, and Samuel Rumph is at the top of that list. In the 1870s, Rumph was a young nurseryman in Marshallville, Georgia. He wasn't just looking for a tasty fruit; he was looking for a way to share the flavors of his home with the rest of the world. In 1870, Rumph cross-bred several varieties to create a peach that was firm, beautiful, and sweet. He named it the Elberta, after his wife, Clara Elberta Moore Rumph. We think that’s a beautiful way to honor family, much like how we honor the memory of Anita and Joseph Malone in everything we cook.
The Elberta peach was a game-changer because:

The flesh was firm enough to withstand the bumpy rides of 19th-century transport.
It was a "freestone" peach, meaning the pit came away easily, making it perfect for both eating fresh and home canning.

The Invention That Changed Everything
Even with a sturdy peach like the Elberta, Rumph faced a massive problem: heat. Shipping fresh fruit in the sweltering Southern sun meant that most of the harvest would rot before it ever reached the hungry markets of the North. To solve this, Rumph didn't just invent a better fruit; he invented a better way to move it. He designed a "peach shipping refrigerator": a specialized wooden crate on casters that held ice alongside the fruit. But he didn't stop there. He soon realized that to really make an impact, he needed to cool the entire railcar.
Rumph’s design for the refrigerated railcar featured ice bunkers at each end. This allowed air to circulate and keep the peaches at a consistent, cool temperature for the entire journey. In 1875, he made a trial shipment of Elbertas to New York City. When they arrived in perfect condition and sold for a premium price, the "Refrigerated Revolution" was born.
