One of the ways we do that is by leaning into the bold, warm flavors of our heritage. This season, we’re particularly excited about one "secret" ingredient that’s making its way into almost every corner of our menu: Bourbon.
Now, we aren't just talking about a drink in a glass (though we love those, too!). In our kitchen, bourbon is a culinary powerhouse. It’s the spirit that ties our recipes together, adding layers of caramel, oak, and vanilla to everything from our signature BBQ sauce to our homemade breads.

Why Bourbon? It’s All About the Depth
We love to explain the "why" behind our cooking because we believe food tastes better when you know the heart that went into it. Bourbon isn’t just about the alcohol: most of that cooks off anyway! It’s about the concentrated flavor left behind.
Think of bourbon like a high-octane version of vanilla extract. It has those same woody, sweet notes, but with an added kick of spice and smokiness that works wonders with savory ingredients. We’ve found that it acts as a bridge between the smoky flavors of the grill and the natural sweetness of summer produce.
When we’re building a menu for you, we look for ways to create "depth." That’s that feeling when you take a bite and can’t quite put your finger on why it’s so good, but you know you want another. That’s the bourbon working its magic!
Our Signature Bourbon BBQ Sauce
If you’ve tried our savory-sweet blueberry BBQ sauce, you know we like to get creative with our glazes. This summer, we’ve taken our classic house-made sauce and given it a heavy splash of Kentucky’s finest.
We don’t believe in shortcuts, so we start from scratch with tomatoes, apple cider vinegar, and brown sugar. Then, we deglaze the pan with bourbon. This process pulls up all those savory bits from the bottom and incorporates a smoky sweetness that bottled sauces just can't touch.
The Heat: The bourbon adds a subtle warmth that complements the chili and smoked paprika.
The Shine: As it reduces, it creates a beautiful, lacquered finish on ribs and chicken.
The Soul: It reminds us of long summer afternoons in the South, where the air is thick with the smell of woodsmoke and hospitality.

Braising with a Southern Twist
While many people associate summer only with grilling, we love to include braised dishes in our family meal planning and event menus. Braising: slowly cooking meat in liquid: is the secret to that "melt-in-your-mouth" texture we all crave.
Instead of just using beef stock or wine, we’ve been experimenting with bourbon-based braising liquids. For example, when we make a slow-cooked pork shoulder or beef short ribs, we use bourbon to deglaze the pot after browning the meat.
We add a touch of molasses and a few cloves of garlic, letting everything simmer until the meat practically falls apart. The bourbon provides a sophisticated backbone to the dish that balances the richness of the fat. It’s comfort food, elevated. We understand that life in the PNW can be busy, so having a hearty, braised dish ready for your dinner party can take all the stress out of hosting!
The "Secret" Bread Hack: Swapping Water for Bourbon
This is the part we’re most excited to tell you about. We’ve been playing around in the bakery, and we discovered something amazing: in certain bread recipes, you can swap out the water for bourbon.
Now, we don’t do this for every loaf, but for our "Spirit of the South" rolls and certain sweet loaves, it is a game changer.
The Aroma: When that bread is in the oven, your whole house will smell like a toasted oak barrel and warm vanilla. It’s incredible.
The Texture: The sugars in the bourbon interact with the yeast and the flour to create a slightly tenderer crumb and a crust that browns beautifully.
The Surprise: We love to see the look on our clients' faces when they take a bite and realize there’s a complex, hidden flavor they can’t quite name.

We love to make a bourbon-caramel drizzle for our seasonal fruit crisps or fold a few tablespoons into our whipped cream. It cuts through the sugar and adds a "grown-up" sophistication to classic treats.
