The Clingstone: The Sweet Early Bird

We often see clingstone peaches arriving first in the season, usually from late May through June. The name tells you exactly what to expect: the flesh of the fruit "clings" tightly to the pit. If you try to pull it apart, the fruit often tears or stays stubbornly attached to that center stone.

The Semi-Freestone: The Best of Both Worlds

We're always happy to find a good semi-freestone variety! These are clever hybrids that offer the intense sweetness of a clingstone with a pit that is much easier to remove. They usually show up right in the middle of the season.

We find that semi-freestones are great "all-purpose" fruits. If we’re planning a large event and want a fruit that can do it all: from being diced into a salsa to being baked into a tart: we often look for these versatile gems.

We’ve brought our love for deep south flavors all the way to the Pacific Northwest, and we’ve discovered that this region has some incredible stone fruits of its own. While Georgia might be the "Peach State," the PNW offers varieties that thrive in our unique climate.

We love to frequent the Tacoma Proctor Market to find the best local produce. Here in the PNW, we look for:

  • Oregon Curl-Free Peaches: These are hardy and delicious, often acting as a great freestone option for our late-summer bakes.

  • Italian Plums: These small, oval treasures are a Southern chef's dream in the Northwest. They are naturally freestone and have a deep, rich flavor that makes for the best plum crumbles.

  • Local Apricots: These early-season beauties make the most amazing Southern-style preserves to pair with our biscuits.
