Southern Food Myths vs. Facts: Why Southern Cuisine is More Than Just Fried (April Fool’s Edition)

Happy April Fool’s Day from all of us at Anita & Joe's! We know that today is usually full of pranks and "gotcha" moments, but we thought we’d take a different approach this year. Instead of trying to trick you into thinking we’re launching a bacon-wrapped-butter-deep-fried-donut (though, let’s be honest, someone would probably order it), we wanted to debunk the biggest "prank" in the culinary world: the idea that Southern food is nothing but heavy, greasy, fried comfort food.
We understand that you may have a specific image in your mind when you think of Southern cooking. Maybe it’s a giant bucket of fried chicken, a bowl of gravy thick enough to hold up a spoon, or a plate of biscuits that feel like bricks in your stomach. We get it! Pop culture and fast-food chains have spent decades telling us that "Southern" equals "fried."
But we are happy to tell you that the truth is much more flavorful, much more colorful, and: dare we say it: actually quite healthy. At Anita & Joe's, we love to celebrate the real roots of Southern cuisine, and we want to take you on a little journey to separate the myths from the facts.
Myth #1: Southern Food is Defined by the Deep Fryer
If we had a nickel for every time someone asked us if we could "just fry everything" for their event, we’d have a lot of nickels! It’s the ultimate Southern myth. While we certainly don’t mind a perfectly crisp piece of catfish or a golden-brown hushpuppy, the deep fryer isn't the heart of the Southern kitchen.
The fact is, traditional Southern cuisine is actually agrarian. It’s a culture built on the land, the seasons, and the garden. Historically, Southern families didn't have unlimited access to expensive oils for deep frying every single night. Instead, they relied on what they could grow.

We love to remind our guests that the "main stars" of a traditional Southern meal were almost always vegetables. Think about long-simmered collard greens, sweet roasted corn, field peas, and vibrant heirloom tomatoes. In the true Southern tradition, meat was often used as a seasoning rather than the main event. A small piece of smoked ham hock or a bit of bacon fat wasn't there to make the dish "greasy": it was there to provide a deep, savory umami base for a giant pot of nutrient-dense legumes or greens.
Myth #2: Southern Food and Soul Food are Exactly the Same
We often see these two terms used interchangeably, and we understand why it’s confusing! While they are definitely cousins, they have their own unique stories. We like to think of Southern food as the "mother cuisine," rooted in the geography and the crops of the American South.
Soul food, on the other hand, is a specific and beautiful evolution of that cuisine. It’s often described as the "immigrant cuisine" of the Black community. When people moved from the rural South to big cities during the Great Migration, they brought their recipes with them.
However, because they were often living in urban areas with less access to fresh garden plots, the "celebratory" dishes: the ones reserved for Sundays and special occasions like fried chicken and elaborate cakes: became the face of the cuisine. We love to honor both traditions at Anita & Joe's, but we also want to make sure the history of the everyday, vegetable-forward Southern table doesn't get lost in the shuffle.
Myth #3: It’s Impossible to Eat "Healthy" Southern Food

Think about a fresh watermelon and feta salad with a mint vinaigrette, or crunchy pickled okra, or a zesty vinegar-based slaw.
The secret to great Southern cooking isn't fat; it’s balance. We use acidity (like apple cider vinegar or lemon juice) to cut through richness and brighten up earthy flavors. We want your guests to leave your event feeling energized and satisfied, not like they need an immediate nap!
