It’s a classic summer "problem" to have, isn't it?

While we’re huge fans of the traditional Southern squash casserole (we’re talking plenty of cheese and buttery crackers), we know that sometimes you want something a bit lighter. When the heat hits the Pacific Northwest, we love to find ways to keep things fresh, crisp, and colorful. We want to help you see these versatile vegetables as more than just side-dish filler.

We find that people often get overwhelmed by the different shapes and sizes at the market, but we love to keep it simple. Here are the three main players we use in our kitchen:

  • Zucchini: The classic green powerhouse. It’s mild, easy to slice, and works beautifully both raw and cooked.

  • Yellow Crookneck: This is the quintessential Southern favorite. It has a slightly bumpy texture and a sweet, nutty flavor that we just can't get enough of.

  • Patty Pan: These look like little flying saucers! They are firmer than their cousins and hold their shape incredibly well, making them the stars of any dinner party platter.

Shaved and Scalloped: The Beauty of Raw Squash

We understand if you’re a little skeptical about eating squash raw. We’ve found that many people are used to it being mushy and overcooked, but when it’s fresh and sliced paper-thin, it’s a revelation!

One of our favorite things to do for our personal chef clients is a Shaved Summer Squash Ribbon Salad. We use a simple vegetable peeler to create long, elegant ribbons of zucchini and crookneck. We then toss them very gently with fresh lemon juice, high-quality olive oil, flaky sea salt, and a handful of torn mint or basil.

This approach eliminates the "mush factor" entirely. It’s crunchy, bright, and looks absolutely stunning on a plate. If you're hosting a small group, we're happy to prepare this as a refreshing first course to wake up the palate before the main event.

Bringing the Heat: Grilling for Deep Flavor

When we're not tossing them in salads, we love to get these veggies over an open flame. Grilling squash brings out a natural sweetness and adds a smoky depth that you just can't get from a sauté pan.

We’ve found that the secret to perfect grilled squash is the cut. Instead of small coins that can fall through the grates, we like to cut them into thick planks or thread them onto skewers.

  • Skewers: Mix chunks of green zucchini and yellow patty pan with red onion and cherry tomatoes.

  • Marinade: We recommend a simple blend of garlic, oregano, and balsamic vinegar.

  • The Finish: A quick char on high heat leaves them tender-crisp rather than soggy.

Elevating Your Event with Stuffed Patty Pans

If you are looking to impress your guests at a private chef event, the patty pan squash is your best friend. Because they are shaped like little bowls, they are perfect for stuffing.

We love to hollow out the centers and fill them with a savory mixture of herbed quinoa, toasted pine nuts, and maybe a little goat cheese. We then roast them until the "shell" is tender. They act as their own individual serving dishes, which adds a touch of culinary sophistication to any catering menu.
